My Nanny Joan made the very best fruit cake, there were very few things she baked, but those she did were always spectacular, and this is her recipe, with a little of my own interpretation!
This cake is full of fruit - sultanas, apricots, raisins, figs, apricots, and dates to name a few. Covered with marzipan and white fondant icing, this is our classic Christmas cake. It is decorated simply but elegantly with candied orange, and rosemary (both edible) and a few extras which you need to remove prior to eating.
This is a 7" cake, and will cut easily into 12-16 slices. We soak this cake with a little Brandy - but please let us know if you'd like yours alcohol free.
